Wild Rice w/Preserved Lemons

Ingredients

  1. 3 c Wild Rice Mix-cooked according to directions replace water with chicken stock (may also use farro or barley. I like Trader Joes rice mix with daikon seeds)
  2. 1 clove garlic
  3. 1 c chopped spinach
  4. 1 cup whole cherry tomatoes
  5. 1 Tbs olive oil
  6. 2 Tbs preserved lemon brine (see Preserved Lemon recipe)
  7. 1⁄2 Tbs finely chopped fresh oregano (may use thyme or other herbs to taste)
  8. Black pepper to taste
  9. 2 Tbs finely sliced preserved lemon peel (see Preserved Lemon recipe)

Instructions

  1. In large pot still warm with cooked rice mix add tomatoes, spinach, and garlic.
  2. Keep on low-medium heat just to soften garlic, wilt the spinach, and warm the tomatoes. Meanwhile mix dressing of olive oil, lemon brine, oregano, and black pepper.
  3. Remove rice mix from heat and drizzle in dressing tossing lightly.
  4. Plate and top with preserved lemon slivers.
