Apple Fennel Chutney

  • 2-3 Organic Apples
  • 1 Fennel Bulb
  • 5 spice blend (cinnamon, cloves, star anise, peppercorns, fennel seeds)
  • Cayenne Pepper (optional)
  • Cherry concentrate
  • Spring Water
  • Palm sugar to taste
  • Chopped almonds (pecans, walnuts, or other)
  • 2 Alchepharma probiotic capsules or other starter culture
  1. In a small bowl combine 5 spice blend, cayenne, and sugar.
  2. In one jar mix cherry concentrate with spring water.
  3. Add spice blend into juice and shake until mixed.
  4. Emulsify probiotics capsules/starter in a small amount of juice then add back into the juice.
  5. In another jar pack apples, nuts and fennel into jar.
  6. Place pebbles to keep submerged.
  7. Pour juice over the top leaving 2 inches of space.
  8. Secure lid.
  9. Leave at room temperature for 3 days to 1 1⁄2 weeks to taste.
  10. Burp jar regularly.
  11. Refrigerate when desired consistency and taste is achieved.
